I don’t know about you but when I hear of vegan cake I think bleugh. It’ll be tasteless, dry and just generally lacking the joy that cake can bring. And oh boy am I wrong! This decadent and moist chocolate cake would put most “regular” cakes to shame. It’s one of the bestand easiest cake recipes I’ve used. Even if you’re not vegan I recommend giving it a go. I should add that my family and I aren’t vegan, not that there’s anything wrong with it of course. My son has CMPA (cow’s milk protein allergy) and an egg allergy which means his immune system goes bonkers and he becomes quite unwell if he eats or even touches anything with dairy or egg in. It’s been a bit of a struggle and I’ll be honest, I’m pretty anxious about him going to nursery/school but we’ve been managing quite well so far and I’m *sure* it’ll be fine. I’m just thankful he doesn’t have to rely on an epi pen.
Anyway. I used this recipe from All Recipes UK. If you’re looking for a cocoa powder that’s safe to use with CMPA or egg allergy sufferers I used Tesco’s own brand. Then for the OMG icing I used step 5 from this recipe from The Vegan Society and just doubled up my quantities. For the margarine I find Vitalite works really well.
It being a birthday cake I used my highly skilled (cough) decorating skills. There’s CMPA/ egg allergy friendly marshmallows and ‘chocolate’ buttons on there. But obviously you can finish it however you want. It would even be lovely with just a dusting of icing sugar or the inclusion of chocolate chips in the mix. Or if you prefer you can make cupcakes. It really is an amazing chocolate cake recipe.
