It was my little
boy's 1st birthday the other day and that means CAKE. My son has a
dairy and egg allergy though which I initially thought meant no cake or rubbish cake,
wrong! I found a rather wonderful vegan cake recipe on Jamie Oliver's
website (here) . These are absolutely beautiful cup cakes.
Incredibly moist and soft. My little boy and everyone else loved them.
Soya
yoghurt, dairy free margarine, and oil are used instead of milk, eggs
and butter. I swear you wouldn't be able to tell the difference .
Here's the ingredients
300 g caster sugar
150 ml sunflower oil
1 teaspoon vanilla extract
500 g dairy-free soya yoghurt
2 teaspoons cider vinegar
350 g plain flour
1 teaspoon bicarbonate of soda
1½ teaspoons baking powder
For the vegan vanilla icing
200 g dairy-free soya spread, chilled
660 g icing sugar
½ teaspoon vanilla extract
You
can find the full details of how to make them here .And a very special
thank you to my mum who made them. She said the recipe was easy to
follow.
