Vegan Vanilla Cupcakes

It was my little boy's 1st birthday the other day and that means CAKE. My son has a dairy and egg allergy though which I initially thought meant no cake or rubbish cake, wrong! I found a rather wonderful vegan cake recipe on Jamie Oliver's website (here) . These are absolutely beautiful cup cakes. Incredibly moist and soft. My little boy and everyone else loved them.

Soya yoghurt, dairy free margarine, and oil are used instead of milk, eggs and butter. I swear you wouldn't be able to tell the difference .

Here's the ingredients






  • 300 g caster sugar
  • 150 ml sunflower oil
  • 1 teaspoon vanilla extract
  • 500 g dairy-free soya yoghurt
  • 2 teaspoons cider vinegar
  • 350 g plain flour
  • 1 teaspoon bicarbonate of soda
  • 1½ teaspoons baking powder
  • For the vegan vanilla icing

  • 200 g dairy-free soya spread, chilled
  • 660 g icing sugar
  • ½ teaspoon vanilla extract
